Despite the fact that this sweetener, like carbohydrates and proteins, has a calorie content of 4 kcal / g, a small amount of aspartame is needed to create a sweet taste, therefore its contribution to the caloric value of food is not taken into account. Compared to sugar, the taste of sweetness from aspartame appears more slowly and stays longer. When heated, aspartame is destroyed, therefore, it is unsuitable for sweetening products subjected to heat treatment.
